Frequent eating prevents problems

Mainly knees but also other joints, feet, fingers, wrists get very painful - and weak.  If knees, become unable to walk without clawing furniture.  If fingers, can't switch on a light.  If wrists, can't use cutlery or hold a glass.  No operation history.  Extensive blood tests show negative on all counts.  Not carpal tunnel.  Joints affected seem to be ones recently used more.  When OK I can run, climb, canoe, ski.  When not, I am crippled.  I have recently found that problems don't occur if I eat more frequently.  4 a.m. first breakfast cereal & soya milk, 8-9 second b/f hash browns and meat, 12-1 lunch (meat, carb, veg), some time between 6 and 8 p.m. dinner, 1-3 courses, wine, if early dinner then a later supper, e.g. pate.  If late dinner, usually struggle to walk to bed as knees have given up.  If strenuous day, need to eat more often.  Slight headache on waking goes on eating.  Dairy and gluten intolerant with Ca supplement 2500 mg /day.  Does this seem familiar to anyone else?  Does anyone know underlying cause and remedy?  Problems for about 8 years, do seem to be getting worse. ::)
