A hamstrings harvest is the stripping out of a hamstrings tendon for use in a graft procedure.

The tendons for cruciate ligament reconstruction are harvested with a tendon stripper instrument from the medial side of the knee.
Pes anserine area
The main hamstring that is harvested is the semitendinosus ("semi-T"), but often another of the pes tendons - the gracilis - is taken also, although it is not actually a hamstring tendon.
